It is well known as ghughara, mainly it is prepared from all purpose flour, boiled potatoes, different kinds of chutneys and some spices. Taste of this amazing street food dish is little sweet, sour and tangy which makes everyone mouthwatering. This easy to make ghugharas are exclusively available at street food carts and shops in entire gujarati cities and villages.

All the required ingredients to make this quick ghughara are very simple and commonly available at grocery shops. Ingredients for Ghughara:

Main Ingredients:

1 Cup All Purpose Flour Dough.
4 Boiled Potatoes.

Other Spices/Ingredients:

½ tsp Black Salt.
½ tsp Red Chilli Powder.
1 tbsp Roasted Cumin and Fennel Seeds.
Salt according to taste.
1 tsp Chaat Masala.
Jaggery and Tamarind Chutney as per required.
Green Chutney as per required.
Garlic Chutney as per required.
Aloo Sev as per required.
Masala Peanuts as per required.
Sweet Curd as per required.
Oil for deep frying.

Garnishing/Serving:

Some Coriander Leaves.

Ghughara Preparations:

  • Put boiled potatoes in bowl then add in chaat masala, black salt, roasted cumin and fennel seeds, red chilli powder and salt.
  • Mix all the things well and mash the potatoes nicely to make potato stuffing.
  • Now take all purpose flour dough and roll out puris from it.
  • Now take one puri and put around 1 tsp potato stuffing at centre, now fold the puri in moon shape and seal it nicely, make all the ghughara this way.
  • Now heat oil in pan, when oil gets heated fry the ghugharas till become light golden brown at medium flame then take out in paper napkin.
  • Now put ghughra in a serving plate and with the help of spoon make little space in them.
  • Now put little jaggery tamarind chutney, green chutney, garlic chutney, curd, masala peanuts, aloo sev in the space and garnish with coriander leaves and enjoy.
