Ingredients for Curry from Potato Fries:

Main Ingredients:

4 Medium Size Thinly Sliced Potatoes.
2 Medium Size Chopped Tomatoes.

Other Spices/Ingredients:

1 Inch Chopped Ginger.
1 Chopped Green Chilli.
½ tsp Cumin Seeds.
¼ tsp Red Chilli Powder.
½ tsp Fennel Powder.
½ tsp Coriander Powder.
½ tsp Garam Masala Powder.
¼ tsp Turmeric Powder.
Pinch of Asafoetida.
Salt according to taste.
Oil for Deep Frying.

Curry From Potato Fries Preparations:

  • Heat oil in a kadai, when oil gets hot put sliced potatoes in and fry on medium flame till potatoes get cooked nicely.
  • Make sure that potatoes get soft and don’t get dark golden brown.
  • It will take around 4-5 minutes to cook then take out in a kitchen napkin so excess oil will be soaked.
  • Now in another kadai heat around 2 tsp oil, add in cumin seeds and let them slather.
  • Now add in turmeric powder, fennel powder, coriander powder, red chilli powder, ginger, asafoetida and green chilli.
  • Quickly mix all the spices so they don’t get burnt.
  • Now add in tomatoes along with salt and mix well with spices.
  • Cook the tomatoes for couple of minutes, if you feel the gravy is dry then add small amount of water.
  • Now add in fried potatoes, garam masala, little water and mix well.
  • Now cover and cook gravy for 2 minutes at medium flame.
  • After 2 minutes turn the heat off and take the curry in a serving plate and serve with roti or fulka.
