Cluster beans curry or Gawar ki Sabji or guvar ki Sabji is a very healthy and authentic Indian curry recipe which goes good with roti or phulkas. Usually mustard seeds and cumin seeds are used for tempering curries but in this curry carom seeds and asafoetida is used which makes is more delicious. This curry is really very simple and easy to make as well as quick too. As far as health is concerned cluster beans are very healthy and no doubt this curry is very nutritious and healthy.

This beans take little long time to cook so it’s better to cook in pressure cooker for consumption of time. You can have this in your lunch or dinner with roti or phulka or paratha whatever you like. Ingredients for Cluster Beans Curry:

Main Ingredients:

250 Cluster Beans (Cut into small pieces and hard side remove).
1 tbsp Curd.

Other Spices/Ingredients:

½ tsp Fennel Seeds Powder.
¼ tsp Carom Seeds.
¼ tsp Red Chilli Powder.
½ tsp Coriander Seeds Powder.
¼ tsp Turmeric Powder.
Pinch of Asafoetida.
Salt to taste.
Oil.

Cluster Beans Curry Preparations:

  • First of all heat 1 tbsp oil in a pressure cooker then add carom seeds and saute it for little time.
  • Now add asafoetida and wait for carom seeds to crackle.
  • Now add turmeric powder, coriander seeds powder, fennel seeds powder and red chilli powder and mix well.
  • Now add cluster beans and saute it little then add salt according to taste and again mix it well.
  • Now add 1 tbsp of water and tighten the lid and let the steam build in pressure cooker.
  • When steam get built lower the heat and don’t let the whistle blow.
  • Keep it on very low flame for 1 minute then turn the heat off and wait till the steam escapes on its own.
  • Do not manually release it as the beans are still getting cooked in that steam.
  • When entire steam escapes open the lid of cooker and mix well then add curd and again give it a nice mix.
  • Turn the gas on and cook it the curry till excess water evaporates, when you see the shine on beans turn the gas off.
  • Serve the delicious cluster beans curry with roti or paratha and enjoy.
